Spicy Devil's Egg

Stuffed eggs, also known as Devil's eggs, are always a great success at a tasty drink.
In addition to the mature cheese biscuit and bacon, this Devil's Egg has a spicy kick of Jalapeño and Chili.

Recipe for 20 stuffed eggs
Ingredients:
10 Large Eggs
3 tablespoons mayonnaise
3 tablespoons crème fraîche
100 grams of breakfast bacon
2 teaspoons paprika powder
1 teaspoon chili powder
2 teaspoons Dijon Mustard (spicy)
1 Jalapeño Pepper
50 gr. Grated Mature Cheese
Chives
Preparation:
Boil the 10 eggs for 6 minutes and quench them with cold water. Let them cool down for 1 hour. Peel the eggs carefully so that they do not break. Cut the eggs in half lengthwise.
Using a teaspoon, scoop the egg yolk from half the eggs and keep them in a mixing bowl.
Place the egg white halves on a plate so that they can be filled later.
Preheat the oven to 230 degrees. Take a baking tray and carefully sprinkle 50 grams of grated mature cheese on it and make 20 small shapes. Place the baking tray in the oven and let the cheese melt until they are golden brown. (+/- 5 minutes) Let them cool down well.
Fry the 100 grams of bacon until they are nice and crispy. Cut the bacon into small pieces. Take ¼ of this bacon and keep it aside for the garnish.
Mix the egg yolk, in the mixing bowl, with pieces of breakfast bacon, paprika powder, Dijon mustard, very finely chopped jalapeno pepper, crème fraise and mayonnaise. Mash the mixture well. Taste the mixture if it needs more spices. (e.g. Salt, Pepper)
Carefully fill the eggs with two teaspoons. For the garnish, sprinkle the remaining bacon on the eggs and sprinkle with some chili powder and chopped chives. As a finishing touch, place the mature cheese biscuit in the center of the egg.
