The holidays are approaching and the oliebollen season is coming up again. Instead of traditional oliebollen, with currants, raisins and apple, surprise yourself, and your visitors, with a savory oliebol. Delicious with drinks or as a snack. I wish you all very happy "culinary" holidays and a healthy New Year.

Recipe for +/- 25 pieces.
Ingredients:
1 bottle of dark beer (Kasteel Beer)
500 grams of flour
1 sachet of dried yeast
1 egg
250 ml lukewarm water
10 gr. salt
2 tsp paprika powder
2 tsp chili flakes
2 tsp oregano
2 tsp garlic powder
120 gr. grated spicy old cheese
120 gr. ham cubes
2 sweet peppers
2 onions
2 liters of sunflower oil
Extra: tea towel, ice cream scoop, kitchen paper
Preparation:
Chop the ham cubes, sweet peppers and onions very finely and put them in a separate bowl. Mix the lukewarm water and the beer in a large mixing bowl. Add the yeast and salt and stir well. Add the flour, little by little, and mix with a mixer (or whisk) until smooth. Beat the egg and add it together to the batter, with the paprika powder, chili flakes, garlic powder and oregano. Finally, mix the ham cubes, sweet peppers, onions and grated cheese through the batter. Cover the bowl with a damp tea towel and let it rise for 1 hour in a warm place. When the batter has risen twice as high, we can start baking.
Heat the deep fryer with sunflower oil to 180 degrees. Dip the ice cream scoop a little bit in the deep fryer and then scoop a ball of batter. Gently squeeze it from the ice cream scoop into the deep fryer. Do not put more than 4 at a time, otherwise they will stick together. Fry the balls for 6-8 minutes (about 4 minutes per side) until they are golden brown and then let them drain on a paper towel.
When all the oliebollen are ready, serve them on a nice plate and sprinkle with some dried oregano. As an extra tip. If you like it a bit more spicy, you can also put a bowl of sweet chili sauce for the dip next to it.
