
Something different from the traditional way of making Mussels. This time, with delicious Spicy Oriental herbs. Baguette with herb butter makes this recipe complete.
Recipe for 4 people
Ingredients:
4 KG Mussels
500 ml. Coconut milk
1 red pepper
1 Yellow Pepper
3 Tablespoons Red Curry Paste
6 cm Ginger
4 tablespoons fish sauce
4 cloves of garlic
1 lime
2 Onions
1 Leek
3 carrots
2 tablespoons olive oil
1 Bunch Fresh Coriander
Preparation:
Clean the mussels with cold water. Mussels that are broken or do not close anymore, throw them away. Chop the red and yellow peppers (remove the seeds), ginger, garlic, leek, carrots and onions finely and fry them with two tablespoons of olive oil in a large pan. The best thing to use for this is a large soup pan. After frying, add the coconut milk and 4 tablespoons of fish sauce. Now stir in 4 tablespoons of red curry paste. Bring this slowly to the boil. Now put the mussels in the pan and put the lid on. Cook these between 5 - 7 minutes. Stir the mussels well and sprinkle them with a generous amount of finely chopped fresh coriander. As a finishing touch, squeeze some lime juice over it and the mussel party can begin.
