Roasted Tomato Pepper Soup

Roasted Tomato Pepper Soup is a delicious and flavorful soup that is perfect for cold days or whenever you are craving a warm, hearty meal. Here is an easy recipe to make Roasted Tomato Pepper Soup.


For 4 persons / Preparation time 60 minutes


Ingredients:


6-8 large tomatoes, quartered

5 Sweet Pointed Peppers, cut into strips

1 red pepper

1 Mild red pepper

1 onion, finely chopped

3 cloves of garlic, finely chopped

2 tablespoons olive oil

Salt and pepper to taste

4 sprigs of rosemary

1 teaspoon dried oregano

1 teaspoon dried basil

0.5 liter vegetable stock

1 can of diced tomatoes (400 g)

Fresh basil leaves, grated Parmesan cheese and Creme Fraise for garnish.


Preparation:


1. Preheat your oven to 210°C. Place the tomatoes, peppers, chilli and rosemary sprigs on a baking sheet lined with baking paper or a roasting tin. Drizzle with olive oil, season with salt and pepper and roast in the oven for about 30 minutes, or until soft and lightly browned.


2. While the vegetables are roasting, heat a large stockpot over medium heat. Add the remaining olive oil and sauté the onion and garlic until soft and fragrant, about 5 minutes.


3. Add the roasted tomatoes, peppers and chilli to the pot, along with the dried herbs. Stir well and let it simmer for a few more minutes.


4. Add the vegetable stock and can of diced tomatoes to the pot and bring to a boil. Then let it simmer on low heat for about 20-30 minutes, so the flavors can blend well.


5. Use a hand blender to puree the soup until smooth, or carefully pour the soup into a blender and puree until smooth. Be careful when blending, as hot liquid may splatter. If you want a thicker soup, you can add less stock.


6. Taste the soup and adjust the seasoning with salt, pepper and red pepper flakes if necessary.


7. Serve the roasted tomato and pepper soup warm, garnished with fresh basil leaves, grated Parmesan cheese and a spoonful of Creme Fraise. You can also serve it with a piece of crusty bread.
