Quinoa Salad

No meat or fish today. A delicious fresh Quinoa Salad. This salad can be used as a main course, but is also delicious with Mexican Tacos or Fajitas.

Recipe for 4 people


Ingredients:


1 Cup Quinoa

1 Can Black Beans

1 Can Corn Kernels

1 orange pepper

12 Cherry tomatoes

1 carrot

3 Sweet Onions

Fresh Coriander

Dressing:

¼ Cup Olive Oil

3 limes

1 teaspoon salt

1 Teaspoon ground Black Pepper

2 teaspoons garlic salt

1 tablespoon chili powder

2 Teaspoons Cumin

1 Jalapeño Pepper

Preparation:

Cook the Quinoa for 8 minutes. Let it cool completely.

Drain the black beans and corn kernels, rinse and pat dry with paper towels. Add to a large bowl. In the same large bowl, add the chopped bell pepper, sliced cherry tomatoes, sweet onions, carrots and cilantro.



Now make the dressing. In a separate small bowl, combine the olive oil, lime juice, salt and pepper, garlic powder, chili powder, cumin, and small diced jalapeño. Mix well.

Add cooled quinoa to the vegetable mixture and pour the dressing over it. Mix everything well and let it cool.

Refrigerate for at least 2 hours or overnight. Serve this salad cold.
