Figs 2.0. That’s what I call this delicious starter/aperitif snack. Figs with Black Forest Ham, Gorgonzola, Pistachio Nuts, Honey and Fresh Thyme on a bed of Lettuce. Just pop it in the oven and TaDaaaaa!!! Really enjoy …

1 fig per person / Preparation time +/- 25 minutes

Ingredients:

- Fresh figs (quantity as desired)

- Thinly sliced Black Forest pork (2 slices per fig)

- Gorgonzola cheese (about 2 teaspoons per fig)

- Pistachio Nuts

- Honey (to sweeten the figs)

- Fresh thyme leaves (for garnish)

- Mix of different types of lettuce (for garnish)

Preparation:

1. Preheat the oven to 200 degrees Celsius.

2. Wash the fresh figs thoroughly and cut each of them lengthwise, but not all the way to the bottom, so that they unfold like a flower.

3. Fill each fig with about 2 teaspoons of gorgonzola cheese or cheese of your choice. You can use goat cheese, various blue cheeses or brie, depending on your taste preference.

4. Wrap each filled fig with 2 slices of thinly sliced Black Forest pork. You can also use smoked bacon for this. Make sure the bacon is wrapped around the fig well to keep the filling in place.

5. Place the wrapped figs on a baking tray lined with baking paper or in an oven dish.

6. Drizzle the figs with a little honey and crushed pistachios to give them a sweet touch. This is especially nice if you want a bit of contrast between the sweet honey and the salty bacon.

7. Bake the figs in the preheated oven for about 10 minutes, or until the bacon is crispy and the cheese is melted. Keep a close eye on the figs to make sure they don't overcook.

8. Remove the figs from the oven and let them cool for a few minutes before serving.

9. Garnish with fresh thyme leaves for added flavor and presentation.

Serve the figs with ham or bacon and cheese as an appetizer or starter and enjoy the delicious combination of sweet, salty and creamy.

Also does very well on a cheese board.

Enjoy your meal …
