Chicken Zucchini Balls in Tomato Basil Sauce

These Chicken Zucchini Balls are one of the juiciest, most flavorful balls you will ever taste. You can serve these in your pasta, as a starter or delicious with drinks.

For 6 persons / Preparation time: 1.15 hours


Ingredients:


Chicken Zucchini

200 grams of zucchini

500 grams minced chicken

1 egg (lightly beaten)

60 grams of breadcrumbs

60 grams Grated Parmesan Cheese

2 cloves of garlic (very finely chopped)

1 tablespoon parsley (finely chopped)

1 tablespoon Dried Basil

Salt and Pepper


Basil Tomato Sauce

1 tablespoon olive oil

2 cloves garlic (finely chopped)

500 grams Tomato cubes

1 tablespoon tomato puree

1 tablespoon sugar

1 bunch of basil

Salt and pepper to taste.


Preparation:


First grate the courgette on a clean tea towel. Spread it out and sprinkle it with salt. The salt draws out the liquid. Put the courgette aside for 20 minutes. Preheat the oven to 180 degrees and use baking paper and place it in the baking tray.

In a large bowl, mix the grated zucchini, minced chicken, egg, breadcrumbs, parmesan cheese, garlic, parsley, basil, pinch of salt and pepper, well together. Form the mixture into balls that are slightly smaller than a golf ball and place them on the baking sheet. You can also use a portioning spoon. Bake the meatballs for 25 minutes. Then a few minutes under the grill for a crispy coating.


For the Basil Tomato Sauce you can actually do 2 things. You can of course buy ready-made sauce (pasta sauce), but it is much tastier to make it yourself. And it is very simple. Heat the olive oil in a saucepan. Add the finely chopped garlic and fry it. Add the diced tomatoes, tomato puree and sugar and bring to the boil. As soon as it boils, reduce the heat and let it simmer for 5 minutes. Stir occasionally. Finely chop the basil and add it. Remove the pan from the heat and puree it briefly with a hand blender. Finally, add a pinch of salt and pepper to taste and the sauce is ready.
