Burnt Ends … Pork belly with a twist and a delicious shot of Bloody Mary Soup. A surprisingly nice combo.

Recipe for 8 people
Ingredients Burnt Ends:
1.5 kg Pork Belly without rind
4 Tablespoons BBQ Rub (Southern Dutch BBQ)
4 Tablespoons BBQ Sauce (Sweet Baby Ray's)
Light Brown Bastard Sugar
Butter
Honey
Smoking wood (Apple)
Ingredients Bloody Mary Soup:
10 tomatoes
4 cloves of garlic
1 teaspoon fresh thyme
1 teaspoon Worcestershire sauce
1/2 bouillon cube
Celery
Olive oil
Tabasco
Vodka
Black pepper
Preparation Burnt Ends (Pork Belly):
If necessary, cut off any loose pieces of the pork belly. Remove the rind if necessary. Then cut the bacon into 4-5 centimeter cubes. Sprinkle the pork belly cubes on all sides with the BBQ Rub. I used the “Touch of Sweet” from Southern Dutch BBQ. The easiest way is to sprinkle some rub on your cutting board and roll them in it. Put the cubes in a ziploc bag and let the herbs soak in for about 4 hours. Prepare the barbecue for indirect barbecuing at 110 - 120 C. Add smoke wood to the fire. Place the pork belly on the grill and leave it there for about two and a half hours indirectly until it is nicely browned. Place them in a metal baking dish or aluminum tray. Sprinkle the pork belly cubes with 3-4 tablespoons of light brown caster sugar. Divide 3-4 tablespoons of butter over the cubes and add 3-4 tablespoons of honey. Cover with aluminum foil and put the tray back in the barbecue for 2 hours. After two hours, remove the pan from the grill and place the pork belly burnt ends in a clean pan (or place them on a clean plate or cutting board and wash the other pan). Add enough BBQ sauce, Sweet Baby Ray's “Hickory & Brown Sugar”, or any other BBQ sauce of your choice to the burnt ends to cover them on all sides and return the pan to the grill. The burnt ends are done when the sauce has caramelized. Depending on your sauce, this will take about 15-30 minutes.
Preparation Bloody Mary Soup:
Cut the tomatoes into pieces and garlic cloves finely and add together with the fresh thyme in an oven dish. Pour olive oil over this and slide into a preheated oven. After 20 minutes, remove the mixture from the oven and scoop the contents into a soup pan. Mix this with the hand blender until 1 whole. If the soup is very thick, you can add some water. Then add the Worcestershire sauce, half a stock cube and Tabasco to taste. Use a nice cocktail glass or shot glass and put a little vodka in each glass. Carefully pour the soup into the glass. Cut a small piece of celery and place it in the soup. Add a few drops of Tabasco and some freshly ground pepper and the Bloody Mary Soup is ready.
