Hungarian chicken paprikash, also known as "Csirkepaprikás" in Hungarian, is a traditional Hungarian dish consisting of stewed chicken in a creamy paprika sauce. It is a popular and beloved dish in Hungary and is often served with noodles or mashed potatoes.

For 4 persons / Preparation time 45 minutes
Ingredients:
4 chicken thighs (bone-in, skin-on)
2 tablespoons vegetable oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
2 tablespoons Hungarian sweet paprika
1 teaspoon smoked paprika (optional, for extra flavor)
1 cup chicken broth
2 tablespoons tomato puree
1 cup sour cream
Salt and pepper to taste
Chopped fresh parsley and chives, for garnish
Preparation:
Start by generously seasoning the chicken thighs with salt and pepper.
Heat the vegetable oil in a large, deep skillet over medium-high heat. Add the chicken thighs, skin side down, and cook until nicely browned, about 5-7 minutes. Then flip the chicken over and brown the other side for another 5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and cook until translucent and starting to soften, about 5 minutes. Stir in the minced garlic and cook for another minute.
Reduce heat to medium-low and add Hungarian sweet paprika and smoked paprika (if using) and tomato paste to skillet. Stir well to coat onions and garlic with paprika.
Gradually pour in the chicken stock while stirring constantly. Make sure to scrape up any browned bits from the bottom of the skillet as they add flavor to the sauce.
Return the chicken thighs to the pan and place them in the sauce. Cover the pan with a lid and simmer gently for about 30-35 minutes or until the chicken is cooked through and tender.
When the chicken is cooked, remove it from the pan and place it on a plate.
Stir the sour cream into the sauce in the skillet and whisk well to combine. Season with salt and pepper. Let the sauce simmer for a few minutes until it thickens slightly.
Return the chicken thighs to the pan and cover with the creamy paprika sauce. Cook for another 2-3 minutes to warm the chicken through.
Serve the Hungarian chicken paprikash with noodles, mashed potatoes or rice. You can also garnish the dish with a little fresh parsley and chives for an extra dimension of flavor.
